ABSTRACT

Preparation of beverages without diluting or blending or both becomes limited utilizing different fruits having their good qualities. Therefore, blending becomes the only way of utilization of these fruits. Moreover there is always a demand from the consumers all over the world for a new product which is nutritious and delicately flavoured. A number of fruits like aonla, plum, watermelon pear, ber etc., which are otherwise not utilized for beverage making could be utilized for preparation of beverages after mixing with some other fruits or spices in appropriate proportions. The present review focuses on the blending of fruit juices / pulp for preparations of fruit based beverages.
